Random thoughts

I have been blogging now 5 weeks off and on... there's been lots going on being October and Breast Cancer awareness month and all...

Over the past weeks, I had reasons for wanting to blog and then went to type and never blogged. Some of my thoughts for titles over the month were as follows:

One at a time...

I don't cook much and I don't have a favorite recipe... I just like to eat. My most favorite recipes are from my mother. During the Thanksgiving and Christmas holidays my mother make two of my favorite dishes... Cranberry Salad and Christmas Casserole. Cranberry salad is side dish... a mixture of chopped apples, cranberries, oranges and nuts in a fancy jello mold with homemade mayonnaise, to die for!! Christmas Casserole is a main dish... baked grits, cheese and sausage casserole with butter running all through it... another to die for dish.

 CRANBERRY SALAD 

4 Cups (1lbs) fresh cranberries
2 medium apples, peeled
1 tbsp grated orange rind
11/2 cups diced fresh oranges
2 cups sugar or equivalent
1 cup pecans, chopped
2 envelopes unflavored gelatine
3/4 cup cold water

Wash cranberries. Soften gelatine in cold water. Place over hot water to melt. While gelatine is melting, put through a food chopper along with apples, using the medium blade. Stir in orange rind, diced oranges, sugar and pecans. Mix well. Stir into the cranberry mixture. Turn into a 2 quart mold which has been rinsed in cold water.  Chill until firm. Just before serving, turn out onto a serving plate. Garnish with a salad green as desired. 6-8 servings.                                                                                                                                                   

To empty salad onto a plate. Put hot water in sink about the heighth of the salad mold. Have the plate you want to put it on right at hand. Hold mold in hot water until you count to five. Then put plate over mold and turn it upside down. Salad should fall out onto plate. Put in refrigerator immediately to re-gel. Be careful how long you leave the salad in hot water, so it won't melt too much. Better to leave it too short a time and have to do it again for a few seconds, than to leave it too long and have it melt!

I have discovered that when I make this with Splenda I have to use one extra package of gelatin and a full extra 3/4 C water.

CHRISTMAS CASSEROLE

4 cups quick grits (1 C grits to 4 C water)
Seasoned salt to taste (1 tsp or so)
2T dried onions
1 stick butter
8-10 ounces extra sharp cheddar cheese, cut in little squares
1 LB hot sausage ( I like Rudy’s – less grease)
4-6 eggs

While grits are cooking, put sausage on, and stir with fork until pieces are fairly small. While sausage is cooking, put eggs in blender and cut cheese into about ½ “ cubes.
Drain sausage on paper towels. When grits are done, remove from heat, add butter and mix. Blend eggs and add a little of the grits to the eggs. Then add the eggs to the grits and pour into casserole, sprayed with Pam. Mix in sausage and cheese. (can be frozen at this point) Cook, lightly covered with foil, at 350 for about and hour+, or until the center is not runny. Serve with yummy bread and juice and/or fruit and you’ve got all your breakfast – OR dinner on Sunday!

The reason I call this Christmas casserole is that I prepare it way ahead, put it in the freezer, and take it out as I’m going to bed on Christmas eve.  I set the over to come on about and hour and a half before I’m ready to eat, and the casserole is ready when we get up.

To increase the recipe I make an extra cup of grits, add a couple of Tbs of butter, two more eggs and seasoned salt to taste.

A weight lifted off my shoulders

For days now which has turned into weeks, there has been something bothering me... I have just figured it out and I have changed it. It was my blog name and what it represented... I have a new blog title... I have transitioned from conservativechristianityblackandwhite to sweetspiritwithinme...

Friends were telling me that my old blog name was hard and racial... I didn't mean for it to sound hard and racial... I was trying to express who I was... and now I'm a new person... blogging is still new to me, please be patient...

Catching Up - The end to a sucessful and committed day

While my husband was out at our lake house today trying to get our new refridgerator fixed which never happened, (another time for another story) I have been on this blog all day trying to figure out how to add Wigets and Gadgets... I have sucessfully learned how to do both... if you were to ask me how I accomplished adding both Widgets and Gadgets it would take me as long to figure out what I did and then tell you.

In the last week, my husband and I traveled down to Florida for a mini vacation with family and friends. Florida in October is so beautiful... cool in the mornings and evenings and warm during the day, just beautiful.                 

Yesterday was my sister's birthday and today is my brother in law's birthday... Happy Birthday to the both of them...

In the last week or so I have committed to keeping a count on carb intake (I'm allowed seven carbs per day) as well as exercising four times a week. I missed exercise today due to figuring out how to add Widgets and Gadgets:(

In Florida we ate Basil pasta, Ceasar salad, Sausage casserole w/fruit and coffee, turkey, lettuce and tomato sandwiches, Shrimp and Grits, Brocolli "fun" salad, cereal w/milk and coffee, Raw/Baked Oysters, Gumbo, Steaks, Piella, garden salad, Sausage casserole and coffee, Chicken salad in tomatoes and red wine with dinner ever night (8oz total per night).

I have not only kept count of carbs I have decided to try and only eat a palmful of protein and carbs at dinner time and 2 or more palmfuls of raw or steamed vegetables and fresh fruit a day. I have verbally committed back to eating 45 calorie yogurt for snacks but have yet to accomplish that. Today at lunch I had chicken noodle soup and actually read the back of the can for serving size. I only had 1/2 can of soup... tonight for dinner I had a palmful of protein and 2 palmfuls of aspargras on a salad plate instead of a regular sized one...

My husband and I have verbally committed to watching a streamed Netflix movie several times a week. I personally absolutely love Netflix and love trying to watch one (whether it be CD or by stream on the TV) every other night or so. This week we have seen: The Fiddler on the Roof, The Accidential Tourist... I have not been told what tonight's movie is... so I better get off here and go find out...

Over the years I have learned to really enjoy hearing and reading good Inspirational Quotes, Sayings and Scriptures. I love to ponder over them and try and think about how far I can read into them and how far they will take me.

I want to share with you. "Calm My Anxious Heart" By Linda Dillow - Summer of 2004

Phillipians 4:11-13 Paul writes 11 Not that I speak in regard to need, for I have learned in whatever state I am, to be content: 12 I know how to be abased, and I know how to abound. In the Holy Name of Jesus, who has forgiven Me in Everything, I now choose to Forgive (my offender). I choose to lay (my offender's name) down at Your Feet and All the pain I have experienced because of the action. Romans 15:5-7 Paul writes
5 Now may the God of patience and comfort grant you to be like-minded toward one another, according to Christ Jesus, 6 that you may with one mind and one mouth glorify the God and Father of our Lord Jesus Christ.
7 Therefore receive one another, just as Christ also received us,[a] to the glory of God.
What is this all mean?? Paul says be content in all aspects of your life, through all of it, and do not be anxious but stay calm too.
David says the Lord Jesus Christ knows about everything we do from before we are born until after we die and HE is in control of it all. We should praise HIM!!
Paul says those who have much shall be good stewards of their possessions and do what is right in the sight of the Lord. Paul continues with total forgiveness of those who harm others as Christ Forgave us. To love our enemies and Christ loves us.
Matthew tells the story of the unforgiving servant.
Paul finishes with we should all be kind and loving toward one another and continue to strive to make others happy because we all fall short in the glory of the Lord Jesus Christ. Amen.

Jumping into Bible Studies

Side Note: Yesterday the 9th was our local Susan G Komen Race for the Cure... it was a great day, 16,000 people showed up to run/walk in the Race, thats the most people we've ever had.  It was also a very hard, sad emotional day too...  I celebrated another year of life and another wedding anniversary as well... my husband and I are huge college football fans and our home team lost yesterday for the first time this season.

Side Note: It's the end of the week, the 8th of October, right before the Susan G Komen RFTC walk tomorrow. I have been volunteering all week long at our local mall helping to get people registered and pick up their Race Day packets... I truly am exhausted!!
          
I started attending bible studies back in the fall of 1998 and my first one was the book of Revelation with our local chapter from the National group Community Bible Study. Community Bible Studies are hard and make you "think and research" if you are not familiar with them as I was not back then.

Let's jump in and take an overview look at the book of Revelation.                                                                        

The book of Revelation is the phenominal conclusion of the Bible. The Apostle (Priest and teacher) John is the Author. Christ appears to John and commissions (instructs) him to write letters to seven churches in Asia (believers and children of GOD), in esscence to evaluate the spiritual conditions of each church and prepare each of them for the things of the future that must all happen before the return of Christ. There are many judgements, Prophecies and a Great Tribulation to come before the return of Christ too. The end of the book of Revelation describes the glorious establishment of the kingdom of GOD and gives details about eternal life.

Who was the Apostle John?? John was born of Zacharias and Elisabeth, a first cousin to Christ, a child of promise with phophecies of missions, who grew up in the desert until the time arrived for his ministry to prepare the way for Jesus. John was a Desciple and then became an Apostle to Christ.

So John was instructed by Christ to tell all the believers in Asia to take a look at their hearts and lives and live for Jesus. John warned the churches about all of the judgements, prophecies and the Great Tribulation before the return of Christ as well as gave specific details about eternal life.

Pretty cool huh??

A Memory Verse: Revelation 1:17-18

17 And when I saw Him, I fell at His feet as dead. But He laid His right hand on me, saying to me,[a] “Do not be afraid; I am the First and the Last. 18 I am He who lives, and was dead, and behold, I am alive forevermore. Amen. And I have the keys of Hades and of Death.

My prayer for you... I pray that Jesus Christ will give you the spiritual vision to see and understand on a deeper level who Christ really is... Amen!!

Back on Track

Side Note: Today is Tuesday the 5th. It is the first week out of the full month of October 2010 and Breast Cancer Awareness month is in full swing...  and I'm just plain tired. I started fundraising for our Susan G Komen local affiliate and our team the "Pink Lady and Associates" back in August 2010. Our Race is not until Saturday the 9th 2010 but I'll be fundraising for the whole month.

Now, getting back on track... there are severals reasons I have decided to start a blog. One reason is I like to remember things of importance to me that I have heard, read or have seen and I want to share them.

Another reason I have started to blog is because over the years I have gained strong Christian beliefs that are important to me and worth sharing too. Lastly, and unfortunately there are things in my life that I have to remember and what better way to help me to remember but to blog and share them? I'm interested in reading your comments and having dialogs too. Let's get started!!

Two of the things closest to my heart at the moment are my politcal Christian morals/values and my exercise regiment and food journals. Exercise and food journals first. The past two years I have been involved with a local weight loss program. After 13 weeks of a complete liquid diet, weighing in and closely being followed by a doctor, I slowly transitioned back into solid foods again, keeping a food journal, continued being weighed in and trying to eat healthy for the next 7-8 months... at that point in time I transitioned again out of the program and just stayed with a regimented exercise program. The regimented exercise program continues to be 3-4 days a week, which includes a 20-30 minutes bike or treadmill cardio warm up followed by another 30 minutes of free weights with a personal trainer and a once a week "CheckIn/Weigh In" evaluation.

Now, about a year later I have uped my weight by about 12-15 lbs after initially losing 40lbs two years ago. I like to exercise and I absolutely HATE recording food journals. There is just something in reality that I just can not stand about facing the fact in writing and actually acknowledging the foods that I have actually put into my mouth and swallowed. It's awful, plain awful.I keep up with the exercise so I must keep up with the food journals too. What I'm actually consuming and most of what I'm supposed to have is as follows:

I have oatmeal and banana every morning seven days a week for breakfast
2 cups coffee w/creamer
Some sort of protein Sandwich (Chicken, Turkey, Egg salad or Tuna Fish)
Or some sort of soup or green salad
Handful of pretzels
Water
Some sort of protein, starch and vegetable
Water (I'm to be drinking at least 5-6 16oz a day)

Honestly, what I actually consume and record may not eactly follow what I'm actually supposed to be eating... thus the weight gain.

Now for the second closest thing to my heart at the monent... my politcal Christian morals/values.

I strongly believe that the world that we all live in and as we all know today, is fast approaching an end and I feel it very necessary to speak from my heart. I was raised with great morals and values and I have come to believe that the same morals and values I and most others like me were once raised with, are slowly slipping away. My eyes have just recently been opened to the passing of what used to be great morals and values and I have alot of different emotions I want to write about and discuss too. My Christian faith and personal relationship with Jesus Christ has everything to do with my morals and values.

An example: I was brought up memorizing Our Lord's Prayer...I have said the Lord's Payer all my life and just recently I had a revelation. Let's break it down...

Our Father - The World's Father
Who art in Heaven - His House
Hallowed Be thy Name - Holy is His Name
Thy Kindom Come - His Children
Thy Will be Done - Have His Way In Our Lives
On Earth - Human Dwelling Place
As it is In Heaven - His House
Give Us - His Children
Our Daily Bread - Enough for One Day Only
And Forgive Our Tresspasses - Forgive Human Sin
As We Forgive - Others
Those Who Tresspass Against Us - Who Have Done Harm To Us
Leed Us Not Into Tempation - Keep His Children Away From Doing Evil
But Deliver Us From Evil - Take His Children Out of Evil
For Thine Is The Kingdom - His Children
And The Power And The Glory - All His, Everything!!
FOREVER AND EVER, AMEN!!

Pretty cool huh??

How about the "Golden Rule". "Do unto others as you'd want them to do unto you." Let's break it down...

Do Unto Others -  Do For/Give To Others - Make Others Happy...
As You'd Want Others - Give And Take
To Do Unto You - Make You Happy

The Golden Rule has been lost as a whole in today's day and age. What are some of the morals and values you remember growing up with?? Have you seen them change since you were a youngster?? Something to think about and ponder over.

Research, ask questions long enough, you'll always learn something new...

Ever since I began blogging, three days ago I have been "researching" to understand blogging better. Several hours ago I learned from a friend that not only could I post more than one "post" per day on and under the same date with a different heading, title or topic but that I could post as many "posts" as I desired... a bit later, I learned from the same friend how to post other bloggers links that don't have a "follow" button into my Dashboard area...  a few minutes ago I researched my Dashboard area and found "Blogs Notes" which are links to other bloggers... too cool!!

I plan to play around and have fun with the buttons and tabs on my posts pages for awhile until I get used to and comfortable enough working with them. I hope that you are up for the adventure with me. I am opened to explanations, suggestions and tips on how to manouver and get the best use out of working blogs. Until later... GOD BLESS!!

My Christian Testimony

Day three... My Christian testimony for you.

When I lived in Central Florida attending Middle and High school, I would visit my sister and her family in south Florida on school breaks... just about every morning my sister would strongly encourage me to get up at dawn, get dressed and we'd head for the beach for sun rise. After returning back to her house, she would read me passages out of the bible. I would sit and listen but I never understood. At times I'd say: "stop reading it, I don't understand and I don't want to listen". My sister kept reading passages from the bible and I kept tuning her out.

Several years later, while living in the North East, my sister was diagnosed with Breast Cancer, she had a reaccurance and several months later, she passed away. I went to visit my sister in the hospital the week before she died and the last hug she ever gave me the spirit of Jesus Christ passed from her into me.

I moved home from the North East several weeks after my sister's deather and I gave my life to Jesus Christ on November 17th of that year. I had been visiting another sister for the weekend who had already given her life to Jesus Christ. That Sunday morning we were in a deep discussion about Jesus Christ right before church began. I had never met my sister's pastor before and lo and behold if he didn't preach almost verbatum on the exact same conversation my sister and I had just been discussing thirty minutes prior. The Holy spirit grabbed me up and made me speechless!! Praise be to GOD ON HIGH!! Amen!! I will never forget that day as long as I live and I've never looked back at my old self since.

Life History in a nut shell

Today is day two... today, I choose to write about and fill in the basics of my life for you...

I was born, raised and married into the Epsicopal Church.
I was born an only child but I have 2 brothers and 4 sisters... I'm the youngest.
My mother passed away and my father remarried my GOD Mother.
I attended three schools in my hometown before going off to school to finish Middle and High school in Central Florida.
I atteneded two post secondary schools in four years time in the North East.
I was a house mother for several developmentally delayed group homes before I went back to school to get a duel certicificate in Home Health and Nursing assistance.
I worked in both private and Nursing home care facilities before I decided to move back home.
One of my sisters was diganosed with Breast Cancer and led me to the Lord Jesus Christ before passing away.
I gave my life to Jesus Christ a few months after moving back home.
I left the Epsicopal Church and became a member of a local Non-Denominational Church.
I met my husband, the youngest of four boys (born, raised and a lifetime member of a United Methodist Church) in the local Nursing home facility I was working in at the time, about a year and several months later we were married.
I was diagnosed with Breast Cancer a year and several months after my husband and I were married.
I began to really struggle with my weight fluxuating up and down.
I have been on weight loss diets, and have even been through a year's program for weight loss and I still continue to struggle to date.
My father passed away and my Mom - GOD Mother - has chosen not to remarry.
To date, my husband and I have been married 11 years.
I/we have never had children.
I/we have 4 cats and 1 very spoiled dog named Jazz.

First time for everything... I thought I'd try it... Blogging!!

Good afternoon!! Where shall I start?? I've heard of and about blogs, I have recently read several types and different people's blogs and now I'm inspired to try and blog...

As a child I liked to write what I called stories in a notebook, I remember having several notebooks... I remember writing about discriptive scenery, everyday was warm and sunny, blue skies and green grass... having conversations between imaginary friends and how we fulfilled our days, everyday.

Many, many years have passed and the notebooks have been put down long ago and eventually were no more...

At this time in my life, I have decided to write some again... I'm very new at blogs and blogging, so those of you who choose to follow along with me, I look forward to new and inspiring friendships, renewed and restored old and loving friendships, lots of laughter and a few tears too along our jouney together!!
